vegan fudge pops

 

We are not a vegan household, but we will never turn down a delicious treat. And these disappeared quicker than the time it took to make them! So, a definite winner!

 

The good news with a recipe like this is that you can adjust it pretty drastically to your taste! Here are some ways that you might modify it

  • Not a fan of added sugar? Remove it!

  • Not feeling a fudge pop and want vanilla instead? Drop the cocoa!

  • Want crunchy peanut butter? Ohhh that sounds good. Do it instead of smooth!

  • Only have a milk yogurt? Replace the nut yogurt! Just know that this modification will no longer be vegan.

  • Want something crunchy, but don’t have a granola around? Add nuts instead!

 

To my knowledge there are 2 different popsicle molds out there. The recipe below is written for both. There are top loading popsicles molds - they will typically stand up in the freezer. And there are back loading popsicles molds - they are the ones that look like they are laying down.

  1. Sift. Sift cocoa and powdered sugar together.

    • Pro Tip: I love to make this when I have “about 1 cup yogurt” left in the container. Then I sift the cocoa and powdered sugar directly into the container, then mix. Save on those dishes!

  2. Mix. Combine yogurt, cocoa, and powdered sugar.

  3. Build Popsicle.

    • Back loaded popsicle mold: Place a dollop of peanut butter into each of the popsicle molds. Add scoops of yogurt mixture, top with granola, and place in popsicle sick.

    • Top loaded popsicle mold: Alternate between adding dollops of peanut butter, yogurt mixture, and granola until full.
