ube pan de sal bread pudding
There is nothing more cheap and fancy than this recipe right here! Using day old bread and turning it into a dessert! Bread pudding was originally called “poor mans pudding”.
ingredients
5-6 cups of pan de sal cut or tear into 1” pieces (this also works with regular bread)
1/2 cup white chocolate (optional)
3 cups of whole milk
2 tablespoons of butter
1/3 cup sugar
1 tablespoon of ube extract
1 teaspoon vanilla
1/4 teaspoon of salt
3 eggs
steps
Put cut/torn pan de sal in a 9”x13” baking dish. Sprinkle with white chocolate chips.
Whisk eggs in a bowl and set aside.
Prepare custard. In a saucepan over low heat add milk, butter, sugar, ube extract, vanilla, and salt. Stir occasionally and cook until butter melts.
pro tip: keep the burner on low. It won’t take more than 5 minutes. If the milk gets too hot, when it combines with the eggs, it will make scrambled eggs instead of a custard.
Once the butter melts, add it to the whisked eggs. Whisking as you add.
Pour custard over bread. Let soak for 1 hour before putting it in the oven.
Bake at 350 for 25 minutes.
