keto friendly fig popsicle

 

We are celebrating fig season with these keto friendly fig popsicles.

With the ingredients I used, these popsicles are about 7 net carbs each.

  1. Mix honey and granola. Set aside. Make sure granola is fully coated. This will help to keep the granola together after freezing.

  2. Mix yogurt, vanilla extract, and optional sweetener.

  3. Place granola into popsicle mold. Press firmly down. You want them packed tight.

    • I found the granola I used, held up really well to the yogurt. If you wanted to alternate layers of granola and yogurt, it would be very pleasant looking and taste great!

  4. Add fig. Add 1-2 slices of fig per popsicle.

  5. Add yogurt mixture.

  6. Freeze for 4-6 hours.
