watermelon salad and fried green beans

 

Ever have one of those days when you need to make due with what’s in your fridge? It’s like the home version of a master chef mystery box challenge.

I bring you a spiced watermelon salad with a side of green beans. Watermelon and feta with spices is very refreshing. Green beans with caramelized onions is a staple.

 

Watermelon Salad

ingredients:

  • 1 teaspoon peppercorn

  • 1 teaspoon coriander seeds

  • 1/2 teaspoon cumin

  • 1/2 teaspoon ground turmeric

  • 1/4 cup of oil such as olive, grapeseed, or avocado

  • 2 ounces feta, crumbled

  • 1 half a yellow watermelon

  • optional - top with flaky salt and/or fresh sprigs of basil

steps:

  1. Slice the watermelon. I prefer to slice watermelon into cute little triangles but only because it reminds me of a summer backyard bbq.

  2. Grind the spices. Using a mortar and pestle to grind the peppercorn, coriander seeds, cumin, and turmeric.

  3. Mix. Mix the spices, oil, and watermelon together.

  4. Top with crumbled feta and salt.

    • Pro tip: if you love cheese, feel free to double it. You will not be disappointed.

Fried Green Beans

ingredients:

  • 1 yellow onion, slice no smaller than 1/8” thick

  • 2 cloves of garlic freshly grated

  • 1 pound of green beans

  • 1/4 cup of vinegar

  • grapeseed or avocado oil

  • salt and pepper

steps:

  1. Heat oil in a pan under a medium heat.

  2. Add chopped onions and stir over medium heat. After a couple minutes add the garlic

  3. Add green beans. After onions have caramelized, this should take a minimum of 10-15 minuets, add green beans. Stir.

  4. Deglaze. Once incorporated, deglaze the pan by adding the vinegar while stirring.

  5. Cover with a lid. Turn down the heat to a medium-low for 5 minutes.

    • pro tip: I like my green beans to have a hearty crunch to them. If you like them a bit softer, I recommend to cook them for another 5 minutes.
