It was my husbands birthday, and he wanted a strawberry cake. So, he gets a strawberry cake. I found the Roasted Strawberry Layer Cake by Benjamina Ebuehi found on Epicurious, and thought it would be perfect.

Things I wanted out of this recipe:

  • must have strawberries. CHECK

  • a refreshing cake flavor. CHECK. this one is lemon + elderflower cordial

  • must have layers. CHECK

What I changed:

  • I made my own version of the strawberry jam. A black pepper and balsamic roasted strawberry jam.

  • I suggest making two batches of the jam. I roasted one of the batches of jam for 10-15 minutes longer, because it was going into the buttercream frosting. I did this to eliminate as must moisture as possible. Everyone loved the jam, so having extra is never a bad thing.

Tips for this recipe:

  • The elderflower cordial or a simple syrup is a must. The cake base is very dry and needs the added moisture.
