tri-tip with gremolata
For my husbands birthday, he received a Traeger smoker. It is something he has wanted for years. We went down to our local butcher (the wise ox) and picked out a beautiful tri-tip. We don’t always eat meat, but when we do, we aim to go to local butcher.
Tri-tip reverse sear
ingredients
1 tri-tip, 3-5 lbs
salt + pepper
steps
Preheat smoker to 225. Preheat should be a minimum of 15 minutes.
Season meat. with a good coating of salt and pepper
Grill meat. Grill tri-tip until internal temperature reaches 130 degrees. Remove + wrap in foil until grill heats up.
Heat smoker to 500. Preheat should be a minimum of 15 minutes.
Sear. Remove foil and sear for 4-5 minutes on each side.
Rest. Let rest for 15 minutes.

gremolata
ingredients
2 tablespoons lemon juice
2 teaspoons honey
1 shallot, finely chopped
1/4 teaspoon salt
1 cup parsley, finely chopped
1/2 cup roasted salted almonds, finely chopped
1/2 cup extra virgin olive oil
salt and pepper, to taste

Combine lemon juice, honey, shallot, and 1/4 teaspoon of salt. Let sit for 5 minutes.
Pro tip: This allows the shallot to marinate, very similar to creating a vinaigrette. It won’t be the end of the world if you don’t wait the 5 minutes, but it does create a much more balanced flavor.
Mix in remaining ingredients. Add the remaining ingredients one at a time, mixing between.

What to do with gremolata? I don’t just use it for try-tip. I have used it on roasted beef, toast, or even as a dip!
