black pepper and balsamic roasted strawberry jam

My husband is a fan in putting balsamic in all sweets, just to see if it works. So, a strawberry jam with balsamic is right up his alley. It is sweet and tangy.

ingredients

  • 2 lbs strawberries, sliced

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon finely ground black pepper

  • 1/4 cup light brown sugar (this is optional if you prefer things not to be too sweet)

steps

  • Preheat oven to 350

  • Mix all the ingredients. Toss the strawberries, vinegar, black pepper and brown sugar together.

  • Bake for 30 minutes. Place ingredients on a quarter baking sheet and bake for 30 minutes. Stir once during the bake.

    • Pro tip: I like a quarter baking sheet because it doesn’t burn the ingredients.

  • Optional step for those who prefer a smooth jam: After you let the jam cool, toss into a food processor and blend for a couple minutes.

What to do with this? I used this recipe for the Roasted Strawberry Layer Cake. But, I would just as easily add this to toast. Because this recipe doesn’t have any preservatives, it is only good for 3-5 days.
