black pepper and balsamic roasted strawberry jam
My husband is a fan in putting balsamic in all sweets, just to see if it works. So, a strawberry jam with balsamic is right up his alley. It is sweet and tangy.
ingredients
2 lbs strawberries, sliced
2 tablespoons balsamic vinegar
1 tablespoon finely ground black pepper
1/4 cup light brown sugar (this is optional if you prefer things not to be too sweet)
steps
Preheat oven to 350
Mix all the ingredients. Toss the strawberries, vinegar, black pepper and brown sugar together.
Bake for 30 minutes. Place ingredients on a quarter baking sheet and bake for 30 minutes. Stir once during the bake.
Pro tip: I like a quarter baking sheet because it doesn’t burn the ingredients.
Optional step for those who prefer a smooth jam: After you let the jam cool, toss into a food processor and blend for a couple minutes.

What to do with this? I used this recipe for the Roasted Strawberry Layer Cake. But, I would just as easily add this to toast. Because this recipe doesn’t have any preservatives, it is only good for 3-5 days.
