tri-tip with cilantro, cucumber, and jalapeño side salad

 

Smokey Sunday! Every smoked meat needs a side dish! Balancing out the meat with something pickled, refreshing, spicy, or a combination.

For an added kick, feel free to add a second jalapeño.

 

tri-tip

  1. smoked on the traeger grill at 225 until internal temp reached 123 degrees

  2. seared in a cast iron for 3 minutes on each side with a tab of butter and 6 sprigs of thyme

 

cilantro, cucumber, and jalapeño side salad

ingredients

  • 1 bunch of cilantro

  • 1 lime (zest and juice)

  • 1 cucumber, pealed and diced

  • 1 jalapeño, roughly chopped

  • 1/2 cup of slivered almonds, finely chopped

  • 1 tablespoon of olive oil

  • salt and pepper to taste

steps

  1. food process. Add cilantro, lime juice, lime zest, jalapeño, and olive oil to the food processor and pulse until chopped.

  2. combine. Combine the cilantro mixture, cucumber, almonds, and salt and pepper.
