tri-tip with cilantro, cucumber, and jalapeño side salad
Smokey Sunday! Every smoked meat needs a side dish! Balancing out the meat with something pickled, refreshing, spicy, or a combination.
For an added kick, feel free to add a second jalapeño.

smoked on the traeger grill at 225 until internal temp reached 123 degrees
seared in a cast iron for 3 minutes on each side with a tab of butter and 6 sprigs of thyme

ingredients
1 bunch of cilantro
1 lime (zest and juice)
1 cucumber, pealed and diced
1 jalapeño, roughly chopped
1/2 cup of slivered almonds, finely chopped
1 tablespoon of olive oil
salt and pepper to taste

food process. Add cilantro, lime juice, lime zest, jalapeño, and olive oil to the food processor and pulse until chopped.
