keto friendly blackberry popsicle
My friend Jon, like many others, has loved the results of a keto lifestyle. He expressed interest in me making a dessert he could enjoy. So these are not zero carb, but by my calculation, they were about 7 carbs per bar.
The ingredients make a little bit more than 8 bars, but this is so that you have fully packed popsicle.

ingredients
1/2 cup low carb granola. I used Low Karb Keto Nut Granola - Blueberry Cinnamon
1 tablespoon honey
1 cup low carb yogurt. I used Forager Unsweetened Plain Cashew Milk Yogurt
1 teaspoon vanilla
8 blackberries, cut in quarters
optional low carb sweetener (for stevia add 1 drop, for swerve 2 tablespoons)
steps
Mix honey and granola. Set aside. Make sure granola is fully coated. This will help to keep the granola together after freezing.
Mix yogurt, vanilla extract, blackberries, and optional sweetener.
Place granola into popsicle mold. Press firmly down. You want them packed tight.
Add yogurt mixture.
Freeze for 4-6 hours.
