honeydew salad with jalapeños, zucchini, and avocado

 

Who doesn’t love a refreshing salad? This one was a house favorite. Anything that can be refreshing but have bold flavors is perfect.

 

ingredients

  • 6 tablespoons white wine vinegar

  • 1 teaspoon fish sauce

  • 1” ginger, peeled and finely grated

  • 1 teaspoon light brown sugar

  • 1 jalapeño, thinly sliced

  • 1/2 honeydew melon, cut into wedges

  • 1 zucchini, thinly sliced

  • 1/4 cup of mint leaves

  • 1 avocado, peeled and thinly sliced

  • 1/4 cup salted, dry-roasted peanuts

  • salt + pepper, to taste

 

steps

  1. Make dressing. Combine white wine vinegar, fish sauce, ginger, blight brown sugar, and jalapeño. Let sit for 5 minutes.

  2. Mix salad. Mix melon, zucchini, and mint in dressing.

    • Pro Tip: Want to tone down the spice? Strain your dressing! It will have some of the flavor of the jalapeño, but cut down on the kick.

  3. Plate salad. Top with avocado, peanuts, salt + pepper.

    • Personal preference: I really like to fan out half an avocado per plate, but this isn’t required.
