homemade marshmallows by alton brown
I have been using Alton Brown’s marshmallow recipe for YEARS (4-5?). I have tried others, but I always come back to Alton Brown.
After pouring this into the mold, I like to add red food gel dots (8-10). I then take a skewer to run through to create swirls. I prefer a wood skewer, so I can just toss it. If you keep the skewer vertical, it will keep the red on the surface. However, if you create circles by placing the skewer at a 45 degree angle and running the skewer deep and lifting up and out. This will get the red to be mixed throughout the mallow (as pictured).
