melon and snow pea salad
I was inspired by a recipe found on Epicurious, but adapted it drastically to the items found in my own pantry. Cantaloupe was replaced with cantaloupe and honeydew. Sugar snap peas were replaced with snow peas. Ricotta salata was replaced with feta, and I skipped the aleppo pepper. So, just a few changes.
We loved this recipe and found it refreshing.
ingredients
1/2 cantaloupe scooped with a melon baller
1/2 honeydew melon scooped with a melon baller
8 oz snow peas, cut on a diagonal
5 tablespoons tarragon leaves
3 ounces feta
1/2 lemon
extra virgin olive oil or avocado oil
salt and pepper to taste
steps
Make Dressing. Add oil to a small bowl. Zest a lemon, and juice half the lemon in.
Mix. Combine cantaloupe, honeydew melon, snow peas, and tarragon. Give a good stir.
Finish. Top with crumbled feta, drizzle dressing, and salt + pepper to taste
