ice cream sandwiches with plum blueberry basil jam ice cream

I originally had planned to make a layered ice cream cake. It was going to have wonderful layers of cake and ice cream. And I had big dreams it was going to be glorious. Well, as you can tell, these are not an ice cream cake. And the recipe did not make enough cake to create 3 layers. So, I started running into problem after problem. Instead of making multiple batches of cake over multiple days…. I pivoted. 

ICE CREAM SANDOS! I mean no one is ever sad by receiving an ice cream sando! 

Would I make this again?

I would not make the ice cream cake recipe, again. But, I would definitely make ice cream sandwiches.
