sourdough rose scoring

My goal for this loaf was to create a rose through scoring. Once a sourdough loaf has completed its last proof and the oven is warming up, it’s time to score! I love using my Wire Monkey Lame. It is so much easier to manipulate.

This is going to sound really weird, but scoring is kinda like watercoloring. At least, I scored this loaf the same way I would water color a rose. With watercoloring and with scoring, it is all about applying more pressure in areas where you want a wider stroke and a small amount of pressure in areas where you want a very thin stroke.

Starting from the center of the flower, I scored in small “C” shapes, rotating around. As I rotated, I increased the width of my shape and the depth of the cut.
