roasted jalapeño and plum jam

We love roasted jams. I have a constant rotation of jams coming through the kitchen in the summer. And this one has a kick. I make a jam whenever fruit gets a little too ripe. What I love about making jams is that I don’t waste fruit that doesn’t look great anymore.

Ingredients:

  • 1 lb of ripe plums (7-8)

  • 3 jalapeños

  • 1/4 cup of sugar

  • 1 tablespoon vanilla

Steps

  • Preheat oven to 350

  • Rough chop the plums. Try to save all of the juices and the peel as you go.

  • Slice the jalapeños. I recommend thinly slicing into rounds. Because I am into a spicy kick, I keep the seeds and membrane.

    • Pro tip: If you are not into spice, I would recommend slicing the jalapeños in half and remove the seeds and membrane, then thinly slice the jalapeños.

  • Mix all the ingredients. Toss the jalapeños and plums with the sugar and vanilla.

  • Bake for 30 minutes. Place ingredients on a quarter baking sheet and bake for 30 minutes. Stir once during the bake.

    • Pro tip: I like a quarter baking sheet because it doesn’t burn the ingredients.
