roasted jalapeño and plum jam
We love roasted jams. I have a constant rotation of jams coming through the kitchen in the summer. And this one has a kick. I make a jam whenever fruit gets a little too ripe. What I love about making jams is that I don’t waste fruit that doesn’t look great anymore.
Ingredients:
1 lb of ripe plums (7-8)
3 jalapeños
1/4 cup of sugar
1 tablespoon vanilla
Steps
Preheat oven to 350
Rough chop the plums. Try to save all of the juices and the peel as you go.
Slice the jalapeños. I recommend thinly slicing into rounds. Because I am into a spicy kick, I keep the seeds and membrane.
Pro tip: If you are not into spice, I would recommend slicing the jalapeños in half and remove the seeds and membrane, then thinly slice the jalapeños.
Mix all the ingredients. Toss the jalapeños and plums with the sugar and vanilla.
Bake for 30 minutes. Place ingredients on a quarter baking sheet and bake for 30 minutes. Stir once during the bake.
Pro tip: I like a quarter baking sheet because it doesn’t burn the ingredients.
