ciabatta (with yeast)

 

These ciabatta loafs can be made in a single day because they get their rise from yeast. Definitely a win, because a sourdough ciabatta takes a definitive 2 days. These had great flavor.

There are many things I would do differently when I re-do this recipe.

  • I had difficulty dissolving the yeast with the flour and water. I ended up with lots of clumps. Next time, I would dissolve the yeast in the water and then add the flour.

  • I would do my last proof on the sheet pan. Like a dumb dumb, I proofed on the counter and had to move them to the sheet pan thus deflating a lot of the yeasts work.

  • I will definitely leave them in a bit longer. I prefer a bit more of a crust.

  • Although I like the large loafs in concept, I think I would prefer to do smaller individual loafs.
